Tzatziki for the Spring and Summer

Tzatziki IS and ALWAYS will be our favourite dressing and sauce that goes with a bowl of nachos by the ocean, or in a chicken wrap two hours before a workout. It’s really that girl! So, let’s dive into a chicken wrap recipe, we’ve shared one before but this is such a good option for the spring and summer season here.

INGREDIENTS: Let’s start with the chicken

2 boneless, skinless chicken breasts
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon salt and pepper to taste
Juice of 1/2 lemon (optional, for extra freshness)

Next step:


In a small bowl, combine the paprika, garlic powder, dried oregano, dried thyme, salt, and pepper. Mix well to create a seasoning blend.

Place the chicken breasts on a clean surface or cutting board. Drizzle them with olive oil, ensuring they are coated evenly.

Sprinkle the seasoning blend over both sides of the chicken breasts, patting it gently to adhere.

If desired, squeeze the juice of half a lemon over the seasoned chicken breasts for a fresh citrusy flavor. This step is optional but adds a delightful zing to the chicken.

Heat a grill or a skillet over medium-high heat. Once hot, add the seasoned chicken breasts.

Grill or cook the chicken for about 6-7 minutes per side and the chicken is cooked through. Cooking times may vary depending on the thickness of the chicken breasts.

Remove the chicken from the heat and let it rest for a few minutes before slicing it into thin strips.

Let’s make the Tzatziki sauce now…

1 cup Greek yogurt
1/2 cucumber, grated and squeezed to remove excess moisture
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 tablespoon fresh dill, chopped (or substitute with fresh parsley)
1/2 Salt and 1/8 pepper to taste

In a bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh lemon juice, and chopped dill (or parsley). Mix well.

Season the tzatziki sauce with salt and pepper to taste. Refrigerate until ready to use.

If you’re making a chicken wrap, here’s what we like to add:

Warm the tortillas in a microwave or on a dry skillet for a few seconds.

Spread a generous spoonful of tzatziki sauce onto the center of each tortilla.

Place a handful of baby spinach or arugula on top of the sauce.

Add the grilled chicken slices.

Top with cherry tomatoes, sliced red onion, and cucumber slices.

If desired, sprinkle crumbled feta cheese over the ingredients and add Kalamata olives.

Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom.

Serve your moist and delicious chicken wraps immediately, or wrap them in foil for a convenient meal on the go.

If you decide on a salad

Add your salad mix, baby lettuce leafs

Pour your desired amount of Tzatziki sauce

Add some red onions

Lots of feta cheese!

Cucumber slices

Baby cherry tomatoes

Your chicken strips

A handful of pitted olives….
